You should check out NYTimes guy, Mark Bittman. He’s not vegetarian but is all about consuming less week and letting veggie dishes shine. I dabble in vegetarianism (non-committal) and I actually LOVE some of the fake meat products. I hate bacon and sausage but like the fake versions. And gimme some fake chicken nuggets any day!
