Los Angeles' Best Bakeries: The Seedy Underbelly of the Pastry Bidness

Now that the whole low-carb frenzy has faded somewhat, Angelenos are once again partaking in bread and pastries. While many are delving deeply into the baked goods scene again nowhere is this more evident than the cupcake craze that has enveloped LA these past few years. As much as I try to espouse the newest fads - I used to own every color of those stupid Hypercolor T-shirts - I think I'm the only one here that thinks that $3.25 for a cupcake is ridiculous. Nowadays, people are fronting like cupcakes are the height of baking. Pfft, I don't care if the frosting is cocoa infused or that the batter is made from the sweat and tears of third world children, it's still a f**cking cupcake. Porto's Bakery

Every time I visit Porto’s, I am confronted with several issues. One is the massive crush of people that are invariably waiting in line for their delicious cakes, pastries and sandwiches. The other is the extreme amount of weight I gain after every delicious outing at this fine establishment. I am not a religious person, but as I bite into their delicious Cuban confections, particularly their fried potato balls, I become convinced that intelligent design is wholly possible. Then, I see the state of affairs on the 405 freeway during rush hour and my agnostic suspicious are once again aroused.

Susina Bakery

Formerly Sugarplum Bakery, I was told by the owner that faced with debilitating legal fees over the rights to the name of the shop, she decided to draw on her ethnic background and rename it Susina Bakery. Name change aside it’s a good thing she’s decided to keep her recipes intact as everything I’ve tried is absolutely delicious. Their cream cheese brownies are the very definition of groin-grabbingly good.

The pizza on the left is well shaped and sliced in equal proportions with a harmonious blend of cheese and toppings. The one on the right was thrown together haphazardly, obviously ill-made and carelessly envisioned, a veritable blight against all that make their living dishing out their beloved pies. Guess which one is mine?

I suppose I should give a shout out to my old place of employment. While the standards concerning employee appreciation, human resource development and overall workplace environment were abysmally low, I have to admit that the bakery continues to put out consistently high quality products. The bakers are all classically trained in the French style and their selection of artisan breads, pastries and cakes rival the more established bakeries in the area. A word to the wise: if you value a heart healthy lifestyle, please avoid the mudslide cookies at all costs. While admittedly delicious, if you knew like I do what goes in them. you would steer clear.

While I could say a lot about the assortment of delicious confections and sandwiches served at this bakery chain, I have to say that the primary reason for frequenting this cafe almost daily was their extreme abundance of attractive female staff. It got to the point where we totally knew their schedules and in-times and would apportion our lunch breaks to ogle them accordingly at the appropriate time. Surprisingly, they didn’t seem to mind.

Baking School: An Oxymoron if I Ever Heard One

In the spring of 2004, I went through an intensive baking program overseas in Korea.  While there, I was supposed to be instructed in the many different schools of baking ranging from French, Japanese to fusion American.  While my fellow students endlessly practiced their cake decorating, pastry filling and bread cutting techniques, I would grab a few baguettes and dinner rolls and play impromptu games of baseball with the janitorial staff in the stairwells.  I would also regularly dip into the storeroom and gluttonously eat many of the leftover sweets that were reserved for care packages to multiple orphanages around town. 

Still, I can say that it was an extremely rewarding experience and I’m glad to have been able to experience it, on my company’s dime no less.  If you’re really in the mood to do some serious baking, check some of these places out.
