What? Afraid to make your own sushi? Making sushi is a fun, rewarding, and a humbling experience. It does take practice, but as long as you can have fun, it is worth the time and can save you some serious cash. Fresh sushi-grade fish isn't hard to find if you live in a big city. Sushi restaurants are popping up everywhere and making sushi at home is becoming more popular. Here are some tips on making your own sushi at home.

Tom’s is a very small fresh fish market. This is a man that knows his fish. Tom takes a lot of pride in his knowledge of safe sushi-grade fish. He also provides an excellent customer service experience. Don’t go to Tom’s in a hurry; Tom takes his time with each customer providing a wealth of knowledge and experience. He will take whatever time is needed to answer quetions. He even showed us how to properly cut fish (but will cut it for you upon request). And, if in season, he takes special orders.

Whole foods has top quality fresh fish. If you’re looking for non-farm raised fish, this is the place to go that has the biggest selection. The price is high, but you know it is fresh, safe, and all natural.

This is an older but very reputable market in Lodo. They have been around a long time and cater to Asian cooking. They have a fresh fish market. The selection is limited, but they have most of your basics: salmon, tuna, halibut, and tobiko. You can also buy most of the basic condiments and utensils here.

Sushi rice is the most difficult part to master. Here’s an easy recipe to try, but beware, I haven’t tried this particular recipe and some chefs study this for 20 years until it is mastered.

How to make hand rolls

Starting with hand rolls is the easiest way to get started with making sushi at home. You can make your own unique hand rolls with your favorite ingredients. Experimenting is fun and not as tedious as rolls.
*in separate bowls, pre-mix your favorite concoctions such as spicy tuna or spicy yellow tail.
*arrange vegetables on a tray – thinly sliced cucumber, juliened carrots thinly sliced avocados, sprouts
*place condiments on a tray – wasabi, pickled ginger, soy sauce, roasted sesame seeds, teriaki sauce, spicy mayo, spicy red pepper
*place rice in rice bowl
*lay a piece of seaweed paper on a flat surface or cutting board
*wet your fingers and place a small amount of sushi rice on the paper
*place your favorite fish/seafood on top of the rice (for example a small amount of spicy tuna)
*place some vegetables on top of that (for example cucumbers and avocado)
*shake some sesame seeds on top
*roll the item into a cone shape

Here are some common items that you’ll need to get depending on what you like: * A bamboo rolling mat (Makisu) * Chop sticks * Cutting board * A sharp knife * Plastic wrap * A wooden spoon or spatula * A large wooden or glass bowl * Small grain rice * Rice vinegar * Mayonaise * Garlic chili paste * Sugar * Nori Seaweed * Wasabi (Japanese horseradish mustard) * Gari (pickled, thinly sliced ginger) * Sushi-grade fish, seafood – salmon, tuna, scallops, shrimp, freshwater eel, tobiko * Vegetables – cucumber, sprouts, carrot, fresh ginger, avocado * Soy sauce * small dipping bowls

How to make a sushi roll

*lay your bamboo rolling mat down on a cutting board
*place a piece of plastic wrap on the mat
*place a piece of seaweed paper on top of the plastic wrap
*wet your fingers and grab a small amount of rice
*evenly distribute the rice onto the seaweed paper (don’t use too much) and leave a small outer edge of the paper!
*add a small amount of each of your favorite ingredients
*take the mat and roll from one side to the other so that it is rolled into a nice compact roll
*unroll the mat from the roll
*use a sharp knive and cut the roll
Tip – cut in center first, then the center of the two pieces so that your cuts are evenly measured.
