How to Make Absolutely Amazing Cinnamon Bread/Cake/Deliciousness
I love, love, love cinnamon cake. Mainly because I can eat it for breakfast, dessert, snack-time, or anytime, really. I spotted a recipe for cinnamon bread, which was really more of a cake and had to make it right away. It was amazing. Here's the step-by-step guide for making your own amazing cinnamon bread/cake/deliciousness. And some extra options just in case the one I made doesn't make your heart beat a little quicker.
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup butter (room temperature)
1 cup white sugar
2 large eggs
1 teaspoon vanilla extract
1/2 teaspoon lemon zest
1 cup buttermilk
1 cup brown sugar
2 heaping tablespoons ground cinnamon
Step 1: Flour Mixture
The first step is to mix your flour, baking soda, baking powder, and salt in a medium sized bowl. When done, set the bowl aside.
Step 2: Start the Batter
Now you’re ready to make the batter. In a fairly large bowl, cream the butter and white sugar. Then add the eggs, vanilla, and lemon zest.
Step 3: Finish the Batter
To complete the batter for the cinnamon bread, you’re going to mix the flour mixture and butter/sugar mixture together. Do this in steps. So, add 1/3 of the flour mixture to the butter/sugar, then add 1/2 of the buttermilk, add anothet 1/3 of flour mixture, the rest of the flour mixture, and the rest of the buttermilk. Make sure it’s all nicely blended together.
Step 4: Mix the Brown Sugar and Cinnamon
Easy! The title says it all. Grab a bowl and mix the brown sugar and cinnamon together. Told ya it was easy.
Step 5: Now Comes the Layering
Now you’re going to layer the batter and cinnamon/sugar mixture in a greased loaf pan (9×5). First pour in 1/3 the batter, then top with 1/3 cinn/sug mix. Repeat. And repeat one more time, making sure you hand a good amoung of cinn/sug mix on top (this is the best part!!).
Step 6: Bake!
Pop the bread/cake/deliciousness in the oven at 350 degrees for about an hour. And try to wait patiently while your whole house or apartment takes on the oh my god mouth-watering scent of cinnamon. Mmmm.
Step 7: EAT
Slice it up and eat it warm, smothered in butter. Or let it cool and just eat it plain because it’s absolutely fabulous that way too.
I got my recipe from a blog called Closet Cooking. They refer to the loaf as Cinnamon bread, but I might argue that it’s cake. Even a bit like coffee cake. But since bread tends to sounds healthier, I’ll just go with that. This recipe is amazing and to be quite honest, the whole blog makes me drool. So go look at it. And get cooking!

This pretty cake makes me realize that I am in dire need of a bundt pan. How cute! Also, I’m sure the pecans are a delicious addition, and the cinnamon sticks are an adorable touch. But white cake mix? I’m not a big fan of mixes, but hey, if you’re in a rush, go for it!

This one involves chocolate, so hi, I am SO there. Allegedly the recipe comes from Starbucks. Nothing like making something you can get from Starbucks all by yourself.
If the cinnamon cake I made was good, adding chocolate to it would have sent me straight to heaven.
I love chocolate. I love cinnamon. I love Starbucks. Must make this now.
So maybe apples aren’t as exciting as chocolate. And maybe Cooking Light isn’t as exciting as Starbucks. But I just think cinnamon and apples is one of the best combinations in the world and why not try to cut a few calories when baking (come on, it just means you can eat more!).
Allegedly this cake is “usually served at Hanukkah,” but I have no idea why. I’d eat it any day.
Apples may be healthy, but they also go oh so fabulously with cinnamon. Don’t let the word “light” scare you!
The hottest thing in cooking these days? Totally rhubarb. I don’t know where this fad came from, but everyone’s doing it and you should too.
OK, so the picture may not be overly appetixing if you’re not a rhubarb fan, but I bet once you take a bite, you’ll be in rhubarb cinnamon heaven.
Rhubarb might not make for the prettiest recipes, but it adds a fantastic kick to so many dishes; you may as well hop on this fad.

I’m pretty much the opposite of a Paula Deen fan, but here she is making spicy cinnamon cake. Looks great, except for the “package spiced cake mix” and “package of instant vanilla pudding.”
I think I’m just amazed she didn’t use any mayonnaise in this dish!
Sure, we don’t know exactly what’s in it, but the online description says something about a sour cream coffee cake and that sounds just amazing to me. It also claims to be a homemade cake “like the one your mother made,” and my mom makes some darn good cakes so I have high standards for this.
