Tofu Pressing at Home
Tofu, extra firm:
Drain well and cut into halves
Horizontally.
Plate and then towel
One layer tofu, towel;
Repeat once again.
Towel then plate two
Put on top something heavy
Wait twenty minutes.
Blackened Tofu - Preparation
Press the tofu well
Cut into strips or cutlets
Melt butter in bowl.
Blend all the spices
Dip cutlets in the butter
Then coat in spices.
On high-heat skillet
Add the butter for frying
Do not let it burn.
Fry coated tofu
Three or five minutes, then flip.
Fry five minutes more.
Serve up with brown rice
Cool, creamy coconut sauce

Blackened Tofu - Ingredients
1 lb. firm or extra-firm tofu
1/2 c. butter, plus extra for frying
3 tsp pepper
3 tsp white pepper
3 tsp salt
4 tbsp paprika
2 tbsp chili powder
4 tsp onion powder
4 tsp garlic powder
2 tsp oregano
2 tsp thyme
Dash of red pepper flakes (for kick – optional)

21 oz. soybeans
0.7 oz. edible anhydrous calcium sulfate (or 1 cup lemon juice)
17 ¾ cups water (that’s 4,200 mL), plus extra for soaking
Items: blender, cheesecloth and containers, a cooking thermometer, a tofu mold (a colander is an acceptable substitute) and a heavy weight (like a rock).
