Kombucha?
Chances are the fact that you know what Kombucha is and wanna make it yourself, you have seen your hippy friends raving about how good kombucha is for you. In fact, Kombucha actually creates some healthy amino acids, like terrine, which are also in many energy drinks and help give you energy. So what exactly is Kombucha?
“Kombucha is the Western name for sweetened tea or tisane that has been fermented using a macroscopic solid mass of microorganisms called a “kombucha colony,” usually consisting principally of Acetobacter-species and yeast cultures. This is essentially the old world process to make vinegar. It has gained much popular support within many communities, mentioned by talk show hosts and celebrities. The increase in popularity can be seen by the many commercial brands coming onto the retail market.”

Steps to Make the Stuff
Get Kombucha culture. You can do this from store bought bottles or buy it online.
Brew one gallon of black tea. Some teas have oils, which will coat and kill the kombucha, so black or green teas are best. Add lots of tea bags to make sure it is strong.
Add one cup sugar or honey to hot tea mixture.
Cool mixture to room temp.
Transfer to clean glass jar and add your Kombucha starter.
Now cover with clean folded cloth and set aside for 2-4 weeks.
Strain and refrigerate. Now its ready to drink.
Brew Batch
Glass bottles are the best for brewing, since they won’t leach toxins.
