Meals in 30 Minutes (Or Less!)
After a long day of work the last thing I want to do is slave over a hot microwave. But there's really only so many scrambled eggs a girl can eat for dinner. So I'm wondering what easy (and tasty!) dishes do you like to make during the week? You don't have to include entire recipes, unless you really want to, of course. Go ahead and let your inner Rachel Ray run wild!
Pizza
Trader Joe’s has made making homemade pizza SO easy with their refrigerated pizza dough. All you gotta do is grab one of these babies, roll it out, and decorate, and there you have it, instant pizza dinner. You can go super basic with red sauce, cheese, and whatever fixings you prefer, or you can gussy it up. I once made a white pizza with ricotta cheese that came out pretty well.
Stir Fry
On those days when someone brings in birthday cake to the office, I feel like I need to do a little cleansing and eat a good portion of veggies for dinner. While salad is a great option, you don’t always have fresh veggies and lettuce hanging around (unless your my mother). So a stir fry is a great way to get your vitamins and cleanse your body of those 3 slices of red velvet cake you ate for an afternoon snack. You can use frozen or fresh veggies and add in chicken, beef, shrimp, or tofu (also feel free to just leave it at veggies.) I have yet to find a packaged sauce I totally love, (I would welcome any recommendations or recipes!) but a combination of peanut butter and hoisin sauce is usually pretty tasty.
Tacos
Tacos are pretty easy to throw together if you’ve got some veggies and some protein lying around. I recently got a little adventurous and attempted to recreate one of my favorite vegetarian tacos from Hugo’s Taco’s on Coldwater (see below): Soy chorizo (which can be found at Whole Foods), potato, onion, and zucchini. I even added honey to my salsa to recreate Hugo’s amazing honey chipotle salsa. And I have to say it came out pretty darn well.
This takes a smidge longer than 30 minutes (only because of the prep time), but I must share this recipe because it’s so darn good…

Turkey burgers
I’ve tried all sorts of turkey burger recipes; the one that was my go-to recipe for so long was super tasty, but there was so much chopping and cutting involved. I wanted to find an easier one. And here it is:
1 lb. ground turkey
2 T. balsamic vinegar
1 c. grated cheddar cheese
1 t. salt
2 T. dried minced onions
1 T. garlic powder
Mix all ingredients, shape into burgers, and grill. These are so tasty and savory!
