Seattle BBQ Done Right -- At Home & Out on the Town

Delicious barbeque may not be the first thing that comes to mind when you think of everyday Seattle, but take it from me (and this guide) -- it can be found here, whether it's at one of our many great BBQ joints, or you decide to go for it in your own backyard.

The "Have Someone Else Do It For You" Way

Steps 1 - 5: Pay For An Amazing Meal

Formerly “Rowdy Cowgirl BBQ”, I can vouch for this place improving under new ownership. And by that I mean the first time I went (when it was Rowdy Cowgirl), it was just OK. However, on my second I had my faith restored in this establishment. The meat was well-cooked and flavored, but I think it was the sides that did me in. Baked beans, mac & cheese, creamed corn, and — wait for it — green beans sauteed with onions and bacon. More please!

First off, let it be known that the proper name for this establishment is “Chuck’s” — which is neither here nor there, as the food is more than able to speak for itself.

Chuck’s is aptly named, as it does indeed reside in a little hole in the wall next to the courthouse. What I really enjoy is that things are kept simple here; 5 or so items on the menu, and they’re only open 3 hours a day (11a-2p, M-F). I think the short hours work in everyone’s favor, since you know what you’re getting hasn’t been under the lamp all day. Which should be the beef brisket. The pork is tasty as well… but seriously, have the brisket.

It’s all about the Georgia Gold, which is the mustard-based BBQ sauce that they generously slather over a pork shoulder before smoking it to perfection, pulling it off the bone and onto a soft roll. Add a side of their freshly-made cole slaw (the mac and cheese is insanely good too), and welcome to Seattle barbeque heaven.

Large quantities of spicy, garlicy, cheesy barbeque wings any way you like. The trick here is that you have to be specific If you want them crispy, tell them exactly what you want, i.e. “seconds away from burnt” or “half of half spicy.”

Willie's Taste of Soul

I’ve spent more than my fair share of time at Willie’s — let’s just say that I no longer need a menu. My order sounds like this:

~ 4 Way Combo with pork ribs, baby back ribs, bbq chicken, and hot links.
~ Greens
~ Yams
~ Extra side of cole slaw
~ Cornbread
~ Faygo Redpop (soda)

I’ve yet to require it, but word is that your first ambulance ride is on the house.

For me personally, this is by far one of the best places to eat in the International District. Period. The barbeque duck is so juicy, it’s as close as meet can get to “melt in your mouth” good. For those of you that get a little freaked out at the though of eating duck, worry not. You can have your pick of anything off the BBQ Specialty Menu and do no wrong, whether it’s the roasted pig or specially-prepared chicken.

Not only have they received national accolades, but their prices won’t smoke your budget. Newcomers need only decide between one of two things: the pulled pork or the 14-hour brisket. Wait to be adventurous on your second trip.

The "Do-It-Yourself" Way

Without a doubt the best meat in town. The freshness and quality service you find here never ceases to amaze me. Yes, they are somewhat pricier than Safeway, or even one of the other few butchers in Seattle, but the fact of the matter is that you get what you pay for.

Just remember — you can sauce it and season it up any way you like it, but BBQ perfection will forever remain unattainable without a quality cut of meat.

Step 2: Prep the Meat

What About the Sauce?

Ah, the sauce.  Is there really one perfect sauce?  Of course not.  Depending on personal tastes, your “perfect” sauce will probably be different from the next person’s.  Your favorite might even come from a bottle, so when it comes to the sauce, my suggestion is to simply use what you like.

When it comes to something you can whip up in your own kitchen, my favorite homemade BBQ sauce actually comes courtesy of the Neelys; you know, the overly-affectionate and annoying couple from The Food Network; While I may have a choice when it comes to watching their bothersome show, I’m powerless when it comes to this BBQ sauce.

NEELY’S BBQ SAUCE

Ingredients:

    * 2 cups ketchup
    * 1 cup water
    * 1/2 cup apple cider vinegar
    * 5 tablespoons light brown sugar
    * 5 tablespoons sugar
    * 1/2 tablespoon fresh ground black pepper
    * 1/2 tablespoon onion powder
    * 1/2 tablespoon ground mustard
    * 1 tablespoon lemon juice
    * 1 tablespoon Worcestershire sauce

Directions:

In a medium saucepan, combine all ingredients. Bring mixture to a boil, reduce heat to simmer. Cook uncovered, stirring frequently, for 1 hour 15 minutes.

Step 3: Build the Perfect BBQ Fire

Yes, this method requires the use of a chimney starter. I see no reason why you would care to try it any other way.
