I stumbled upon Proto’s before ever hearing all the hype about it and it was no let down. My favorite part was watching the chefs throw the dough in the air so artistically it was like a dance. And, they serve a great list of beers. It’s fairly small and gets very busy, so go in when you have time to relax and really enjoy the atmosphere. Toppings range from standard meet and cheese to more gourmet veggies and cheese varieties.
One of those packed little city restaurants, Protos has some of the best pizza I’ve found. Super-thin crusts, thin layers of sauce and cheese and light toppings allows the taste of everything to come through in harmony. This place gets packed during dinner hour, so come prepared for a wait at the bar.
After working for more than two years in a sub-par pizza shop, I’m a little picky about pizza. Proto’s definitely makes the cut. It serves these fantastic crispy thin-crust, light-cheese pizzas that perfectly balance the flavors of the toppings with the sauce, bread and cheese. A small 7” pizza is perfect for one person (get a salad too if you’re hungry), and there are abundant choices using ingredients like San Marzano tomatoes, feta cheese, pesto and fresh herbs.
